
What is Food Processing?
If a group of people are asked to define food processing, there will likely be several different answers such as making a meal at home or watching donuts on a conveyor belt or learning how a favorite cereal is made.
None of those answers are wrong, but ultimately, food processing is how raw agricultural ingredients like grains, fruits, vegetables, dairy, or meat are cleaned, prepared, cooked, packaged, and preserved to create the foods available in grocery stores or restaurants.

Food processing encompasses a wide range of procedures, techniques, and technologies used to convert fresh ingredients into food products. The complexity of food processing ranges from minimal like washing and cutting fresh produce, to sophisticated industrial operations that produce complex formulated foods. The level of processing can also vary significantly, with some processed foods retaining most of their original nutritional properties while others undergo substantial changes.
KEY STEPS IN FOOD PROCESSING
Food processing typically involves several fundamental steps. Although the exact sequence and methods can vary, most food processing includes some form of these processes.
Step 1: Procurement of Raw Agricultural Materials
The procurement of raw agricultural materials is an important first step in food processing. It establishes the foundation for product quality, safety, and consistency. Procurement of ingredients includes supplier selection, geographic considerations, contract negotiations, quality assurance, traceability systems, regulatory compliance, testing and verification, risk management, and safety procedures.

Step 2: Cleaning and Sorting
Cleaning and sorting are early steps in food processing that remove contaminants, separate defective products, and prepare raw agricultural materials for the next steps in processing. The cleaning and sorting stage impacts downstream processing efficiency, product safety, quality, and consistency while preventing equipment damage. Removing dirt, pesticides, and foreign materials through dry or wet cleaning, air blasting, manual or mechanical sorting are just some of the methods that can be used in this step. Modern facilities often employ combinations of these technologies in integrated cleaning lines, with increasing automation and sensor-based controls to optimize performance while minimizing water and energy use.
Step 3: Peeling And Trimming
Peeling and trimming involves removing inedible, undesirable, or aesthetically displeasing outer portions of raw agricultural materials. These operations significantly impact product quality, yield, appearance, and processing efficiency. Removing inedible portions like peels, stems, or seeds, by using manual, automated, thermal, or chemical methods depends on the characteristics of the raw material. Modern facilities increasingly employ hybrid systems that combine different technologies to achieve optimal results with minimum waste.
Step 4: Size Reduction
This is when large food materials are broken down into smaller, more uniform pieces using methods such as cutting, slicing, grinding, or pureeing. The selection of appropriate size reduction methods is product-specific and is an important engineering decision in food processing production design.

Step 5: Mixing and Formulation
Mixing and formulation in food processing is the combining of ingredients according to specific recipes to achieve desired flavor, texture, nutritional profiles, and overall quality.
Step 6: Heat Treatment
Heat treatment in food processing is when heat is applied using processes such as blanching, pasteurization, sterilization, or cooking. The goal of heat treatment in food processing is to eliminate pathogens, inactivate enzymes, achieve desired sensory qualities, and extend shelf life.

Step 7: Preservation
Preservation is when methods are used to prevent spoilage and to extend the shelf life of the final food product. When preservation is mentioned in the context of food processing, often the word preservative comes to mind. Preservatives such as salt, sugar, and organic acids like citric, succinic, malic, tartaric, lactic, and propionic acids can be a component of preservation but is not interchangeable. Preservation methods can include thermal processing , freezing, drying or dehydration, fermentation, chemical, and modified atmosphere packaging.

Step 8: Packaging
Packaging in food processing involves selecting the appropriate materials to develop containers that protect food from contamination, extend shelf life, and provide nutritional information. Packaging is also important in maintaining food safety. Different foods will have varying requirements for the type of packaging such as glass, metal, or paper.

Step 9: Distribution
Distribution is what connects food processing plants with end consumers. Distribution involves logistics from movement to storage to final delivery of the food item. Maintaining proper temperature, humidity, and handling conditions during warehousing and transportation is essential in delivering a quality product safely.
These are general steps and will be different depending on the final food product, objectives, and regulations. Some food processing may also include additional specialized steps like extrusion (cereals, snacks, pasta), homogenization (consistent texture in products like milk), filtration and membrane separation (juices, dairy products), enzymatic modification (alter flavors, textures, or remove undesirable components), and fortification (adding nutrients).

Throughout the above food processing steps, manufacturers must adhere to food safety standards, regulatory requirements, and quality control. There are several governing bodies throughout the world that aid in the requirements for food quality and safety such as the U.K. Food Standards Agency (FSA), the U.S. Food and Drug Administration (USDA), or HACCP International.
